Quinoa zucchini dill fritters
These little fritters are loaded with flavor and smile-friendly ingredients! Hot or cold, serve the savory patties as an appetizer, a quick snack, or crumbled over a salad. They’re even easy to take on the go!
Ingredients:

½ cup uncooked quinoa, rinsed well

1 ½ cups zucchini, grated

Kosher salt

2 eggs
-
⅔ cup feta cheese
-
¼ cup fresh dill, plus extra for garnish

1 small red onion
-
1 garlic clove, finely minced

Salt and pepper, to taste

⅓ cup olive oil
Directions:
- Cook quinoa according to package directions; set aside to cool.
- Place grated zucchini in a bowl and sprinkle with cooking salt. Let sit 5 to 10 minutes. Squeeze water out of the zucchini, then pat with a thin towel (not a paper towel) to soak up any extra water.
- Whisk eggs in another bowl. Add cooked quinoa, feta, zucchini, dill, onion, and garlic. Add salt and pepper to taste. Combine well.
- Form mixture into patties not more than 1-inch thick.
- Heat oil in sauce pan until it starts to smoke. Add fritters, pressing each one with a spatula to flatten. Cook for about 4 minutes, then flip and cook an additional 4 minutes or until golden brown.
- Garnish with extra dill.
